Pastry Chef

Position Summary Silk is hiring a Pastry Chef to own our dessert program. You will develop, produce, and execute a menu of house\-made desserts that meets the standard our guests expect: refined, consistent, and worth coming back for. You are responsible for recipe development, daily production, and plating during service. Every dessert that leaves the kitchen should be identical in quality to the one before it. Consistency is not optional here. You will manage your own ordering and inventory, keep your station organized and compliant, and communicate proactively with the General Manager on costs, sourcing, and menu changes. You will also support special orders and events as the program grows. We are looking for someone with proven pastry experience in a restaurant or bakery setting, strong time management, and the discipline to execute at a high level without supervision. Job Duties Plan and execute all pastry and dessert preparation, from daily production through plating during service Develop and modify dessert menus that meet Silk's quality standards, in coordination with the Chef de Cuisine Estimate ingredient requirements and manage pastry\-related food and labor costs Coordinate with the General Manager on equipment purchases and repairs Give every plated dessert its final touch before it leaves the kitchen Work in step with the Chef de Cuisine and line cooks to maintain smooth service across all stations Perform administrative duties in accordance with current company policy Comply with all nutrition and sanitation regulations Comply with current safety standards Maintain a positive and professional approach with coworkers and customers at all times Job Requirements, Skills, and Qualifications: Proven industry experience as a Pastry Chef in a restaurant, bakery, or hospitality setting is required; 3\+ years preferred Associate degree required; Bachelor's degree in Pastry Arts preferred Must obtain ServSafe certification within 90 days of employment; certification cost is the responsibility of the employee Excellent record of kitchen management Must be able to spot and resolve problems efficiently and effectively Must be capable of managing and prioritizing multiple tasks Must keep up with current pastry trends and best practices Must be outgoing, pleasant, and driven to provide an upscale and unforgettable experience to every guest Must possess strong leadership, organizational, communication, and customer service skills Must be attentive to detail Must be willing to learn and share knowledge with other staff members Must be able to lift a minimum of 50 pounds Must be able to stand for 8\+ hours; shifts regularly run up to 10 hours Must be a team player and work effectively in a team environment Team Conduct Silk Utica operates as one kitchen, not separate camps. The Pastry Chef is expected to be a team player at all times and to communicate directly and respectfully with the Chef de Cuisine, line cooks, and front of house. Silk has a zero tolerance policy on interdisciplinary arguing or fighting. Any violation will result in being sent home immediately and entering the disciplinary process.
