Nature of Work
Under general supervision performs a variety of general office assistance duties and commercial kitchen management and operations. Duties involve some scope or consequence in support of an office operation, commercial kitchen or work unit. Work involves typing and processing correspondence, reports, statements, manuscripts, forms and other materials into form from typed or handwritten copy. This requires the use of various office machines and commercial cooking equipment, as well as the application of judgment based on general knowledge of the operations of the office or Child Nutrition organization to which assigned. Employee is responsible for screening and routing materials according to content of communications and resolving questions and problems using established procedures, referring unusual situations to others for guidance.
Duties and Responsibilities
- Maintains Child Nutrition item database with nutritional content by item
- Maintains Knowledge and Understanding of USDA Guidelines Associated with the National School Lunch, School Breakfast and Summer Meals Program, and Fresh Fruit and Vegetables programs
- Develops recipes for use in the National School Lunch, School Breakfast and Summer Meals Program, and Fresh Fruit and Vegetables programs
- Ensures recipe yields are correct and documented within the Child Nutrition System
- Develops nutritional menus following USDA Guidelines for the National School Lunch, School Breakfast and Summer Meals Program, and Fresh Fruit and Vegetables programs
- Develops and Distributes Production Records
- Conducts Product Testing and maintains testing records
- Publishes and maintains Menus on the Child Nutrition Website
- Point of Contact and Liaison between school nurses and café leadership for Student Allergies
- Maintain Child Nutrition Database for Student Allergy
- Communicate Allergy Plans with Kitchens
- Provide Customer Service to Families of Wilkes County Schools regarding meal service questions
- Maintain USDA Compliance Workbooks and planning for all published menus
- Maintain Smart Snack Compliance for Ala Carte Items
- Maintain communication with other departments as needed
- Develops Training Materials for Child Nutrition Programs associated with menus
- Makes arithmetic calculations manually or by use of a calculator according to established methods.
- Operates copying machines, adding machines, personal computers, and other office equipment. Receives standardized reports and compiles data into summary or consolidated form
- Promotes Nutrition education in the school, home, and community
- Performs other related work as required.
- Experience in Dietetics, Nutrition, Hotel/Restaurant Management, Food Service or other closely related field OR a minimum of a high school education with three years’ experience in school food service management;
- Ability to supervise and train CN staff members in a professional, positive and engaging manner;
- Knowledge of nutrition principles, food preparation, recipe development, safety and sanitation;
- Extensive knowledge of USDA Meal Patterns and Dietary Regulations
- Understanding of the USDA National School Lunch, School Breakfast, Summer Meals, CACFP Guidelines and Fresh Fruit and Vegetable programs
- Ability to read and interpret federal, state and local standards concerning food production, sanitation, nutrition and procurement;
- Ability to read and interpret product formulation sheets
- Skilled in the use of commercial food preparation equipment and desire to learn about procurement, and HACCP;
- Working knowledge food allergies
- Advanced computer skills, including Microsoft Office Software, LINQ nutrition and a strong desire to develop additional technology skills;
- Task oriented and the ability to prioritize various tasks at one time;
- Ability to stand for long periods of time and lift at least 50 pounds;
- Ability to obtain and maintain Professional Food Manager Certificate
- Ability to maintain high level of discretion
- Ability to manage and lead a kitchen if necessary
